The blade is beveled on one side, creating a thinner edge than a knife beveled on both sides, which allows extremely fine cuts. Also, only the beveled side requires the main sharpening, so less time is required for maintenance. Variation:Variation in the natural wood grain. Knives that are not hammered but manually forged employ metals such as pre-bonded steel. They are shaped by pressing devices holding the Kiridashi knife molds. This results in slight size and weight variations.History: Baishinshi is a brand produced by a blacksmithing family that has been forging carving knives and chisels for more than 250 years.
