HOW TO MAKE PUTTU/ PITTU INGREDIENTS 8 cups of rice flour 5 cups desiccated coconut 1 (15oz) can coconut milk 1 can hot water (use the coconut milk can measure) 2 tablespoon salt METHODS Place the dried coconut in a bowl and pour coconut milk over it with hot water. Mix well and leave to soak the coconut for 20-30 minutes. Sift the rice flour and salt together. Set up the hot water steamer and bring the steamer to a boil before you see the steam come from the top of the steamer. Take a cup of sifted rice flour/salt mixture in a fresh bowl and blend with a 2/3 cup soaked coconut mixture.
